This quick Kerala Parippu Payasam (also known as Parippu Pradhaman) is a rich, comforting South Indian dessert made with split moong dal, sweet jaggery and creamy coconut milk.
Ready in about 30 minutes, it is perfectly spiced and finished with crunchy toasted cashews, coconut bits and raisins.
This dessert is typically gluten free and can also be made vegan by substituting ghee with coconut oil.

Achari Paneer is a vibrant North Indian dish where soft paneer (Indian cottage cheese) is simmered in a tangy, spicy and creamy gravy inspired by traditional Indian pickles (achar).
It features a distinct homemade or store-bought "achari masala" made with robust pickling spices like mustard, fennel, cumin, fenugreek and nigella seeds.
Serve with:
● Basmati rice
● Jeera (cumin) rice - normal boiled basmati rice Simmered with a Saute of Jeera cooked in Oil or Butter
● Naan
● Cucumber raita

For a workplace buffet You can make it slightly saucier by adding 100–150ml water after the yoghurt. This helps it stay moist if it's sitting out for a while.
